Sooo Kimchi is a probiotic lactic-acid bacteria (LAB) fermented vegetable food inspired from Korea, the most common of which is baechu or Napa cabbage and white radish cubes. Artisanal made small batches in Amsterdam from a natural fermentation method, vegan and unpasteurised.

What does Sooo Kimchi taste like?

Fermentation brings acidic and tangy flavours to this kimchi. It has a sweet, spicy and sour taste and a crunchy texture of the vegetables. As fermentation continues to progress, the kimchi will get more sour. It is addictively tasty and brings a kick into your appetite. You will find yourself adding Sooo Kimchi to every dish because of its umami flavour.

What's in Sooo Kimchi?

Unlike regular kimchi, it doesn’t contain any fish sauce or shellfish. It is 100% vegan and unpasteurised.

 

Napa cabbage kimchi contains:

Napa cabbage, carrot, white radish, red pepper powder, doenjang (soybean, wheat flour, rice koji), red onion, apple, sugar, mirin, garlic, spring onion, ginger, rice vinegar, tomato, sriracha, water

How do I use Sooo Kimchi?

You can add Sooo Kimchi to literally every dish. From traditional recipes like kimchi fried rice, noodles to grilled cheese or just straight from the jar, nothing is too crazy.

 

How long does Sooo Kimchi last?

You can store kimchi for up to six months in the refrigerator. Keep in mind that the flavour and texture will slightly change overtime as kimchi is a living product and will continue to slowly ferment in the refrigerator.

This kind of fermentation does not require a starter to ferment, instead, it ferments in its own natural way with little energy needed. Unlike other preservation methods in which the food loses its nutrients overtime - with fermentation - it increases the good bacteria a.k.a probiotics (great for gut health!)
